  I've a nice case study that I've started for your second suggestion, taking the homepage of a major Irish institution and redesigning it with web standards to show the additional benefits of accessibility. 

  In terms of your first suggestion, I'd love to get more details from you. I was going to touch on the legal aspects, briefly covering Irish law, namely the Disability Act, Equal Status Act and the Employment Equality Act with some examples.
